W30 at Home
We quickly learned that eating our way through our new home base, though delightful has real ramifications. Eager for a reset, we embarked on another round of W30 to ease the strain on our waistbands.
Sourcing easy W30 meals proved a challenge from the start (I miss you deeply, Applegate and Aidells), leaving me to scratch make well, everything. With the pandemic severely limiting our take away options from the start, it became painfully evident I’d be scratch making far more than I originally envisioned. Which, when you are locked down with toddlers at home requesting snacks approximately every 20 minutes, it felt/feels like I never leave the kitchen.
Some recipes are old favorites (roasted sweet potatoes, apple/almond butter, nuts, turkey bacon, eggs in every form), others rising stars. And, it wouldn’t be a true exploration if there weren’t a few blunders (here’s looking at you, blender bread).
Breakfast Staples - Chia seed pudding (bonus flavor points if you use home made cashew milk), coconut milk yogurt parfaits
Potatoes from Grandma’s German Cookbook (Kale and Sausage Stew recipe), used at least a half dozen times since. A pain to prepare, but well worth the effort as the potatoes are boiled first, then peeled, sliced and caramelized with ghee in a saucepan until brown.
Sparkling water w/ mint, strawberry is an effervescent beverage, rivaling sparkling water. Then again, we haven’t had la croix in a hot minute so, desperate times.
Roasted butternut squash soup - makes my taste buds, DANCE.
Fish filet - staunchly “anti-mayo” this sandwich has me spooning massive dollops, creating a delicious mess.
Gyro bowls - dinner is, served.
Tandoori chicken burgers - incredible flavors, HERE.
Harvest chicken skillet - comfort in a skillet.
Carrots/almond butter - snack time, elevated.
