W30 Cashew Cream

Guys. This sauce is BANANAS good. I was leaning hard on skepticism and tried this on a whim because I had the ingredients at the ready.  Served over cauliflower rice with steamed broccoli and shrimp. Of note: I prepared the shrimp in the cream along with some ghee and salt/pepper, then added the steamed broccoli.  Utilized the remaining sauce a few nights later as a sauce for steamed veggies. 


It should be illegal, it's that good.

Cashew Cream via Jen Hatmaker


12 oz bag raw cashews

1 can full fat coconut milk
Same amount of veggie stock (I had chicken on hand)
Juice of one big lemon
Plenty of salt
2 garlic cloves (used 4)
A few dashes of cayenne
Some fresh grated nutmeg (just a dash)

Put all ingredients in and let sit in the blender for 30 minutes. Blend till smooth.
