Pati’s Mexican Table

Revisited Pati’s Mexican Table for new recipes and boy was it a treat.

Picadillo Empanadas - worth the effort. The dough is buttery and flaky, while the filling packs a flavor punch to balance it out. I have no desire to recreate this again soon as it is quite time consuming, but highly recommend.

Scribble Cookies - my ganache never set so they weren’t sandwich cookies, a trivial fact that did not deter us from enjoying them.

Mexican Meatballs - tender meatballs in a smoky sauce that comes together so easily. Delightful with rice, though next time I’ll be sure to have some crusty bread on hand to really savor the sauce.
