Arroz con Pollo


The other day I was full of energy and decided to actually cook. For the first time in, long enough for me not to recall. Again I say it, (pregnancy) fatigue is real.

We had part of a rotisserie chicken leftover (from Sam's, I'm obsessed, ever had them?) and thought arroz con pollo sounded like the best idea. Noted below are the substitutions I made using the ingredients we had on hand.


Arroz con Pollo via Food and Wine

  • 1 tablespoon olive oil (substituted bacon fat -- cuz I'm paleo like that)
  • 4 chicken thighs*
  • 4 chicken drumsticks*
  • 2 teaspoons salt**
  • 1/2 teaspoon fresh-ground black pepper**
  • 2 ounces smoked ham, cut into 1/4-inch dice (substituted bacon)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 3/4 cups canned tomatoes, drained and chopped (substituted fresh tomatoes)
  • 1 tablespoon tomato paste (substituted sriracha)
  • 2 cups canned low-sodium chicken broth or homemade stock (I used the homemade stock leftover from this recipe)
  • 1 cup rice, preferably long-grain
  • 2 tablespoons chopped fresh parsley
*I used half a rotisserie chicken without the skin
**I only used 1/4 tsp of Salt and Pepper, the stock I had was super flavorful already


We consumed all four servings in less than two days. I'd say it was a success.
