Cheesy Goodness
Thanks to binge sleeping and Target brand maximum strength mucinex, curly hair is feeling so much better. Praise Jesus.
As I sit here, watching RHOA + Blood Sweat and Heels instead of frantically packing my things for tomorrow, I'm overjoyed. Thank God for work holidays. #happypresidentsday
My week-long foray into veganism (day one, here) went, great. Going into it, I had very little knowledge of what being vegan actually was besides not binge eating cheese. Like I usually do. Once I found vegan butter and cheese it was on like donkey kong.
For breakfast I whipped up a batch of Blueberry Oatmeal Muffins

To "vegan" the recipe I substituted applesauce for the egg. Easy Peasy.
And within an hour I had vegan breakfast for the week. #winning
Day #2
(Monday 2/10)
Breakfast: Blueberry Oatmeal Muffins (2), Coffee
My latest coffee creation has been a little something like this -- tip: warm up all the ingredients (minus the coffee) then mix together for a piping hot mug of love. At about 140 calories. Boom.
2 tbsp cocoa powder
2 tbsp sugar in the raw
splash of Vanilla extract
1/3 cup Almond Milk
1 tsp Coconut Oil
Coffee
Lunch: baked sweet potato
Snack: carrots + spicy guac
Had some amino energy, hit the gym for a run - thank God they have cable again, and headed home for my first Tabata workout (squats + push ups), and the reunion of Vanderpump Rules.
Dinner: mac n cheese - it was, awful. Never again. That's all I'll say about that...
Dessert: blueberry + strawberry slushie. Pop frozen berries, honey, water in the magic bullet and blend to desired consistency. So good, so sinless.
Day #3
(Tuesday 2/11)
Hit the gym for an early workout - struggle bus - my legs were so sore from squats yesterday. Yowza.
Breakfast: Blueberry muffin (2) while four dozen Valentine Dunkin Donuts sat on the seat next to me. No vegan options, nothing for Marcia.
Lunch: chicken noodle soup

Dinner: italian wonder pot (via Pinterest). Smelled divine while it simmered. Tasted the opposite. #neveragain
After the epic fail of dinner M and I choked down despite its taste, we finally sat down and bought tickets for our vacation -- to FRANCE this summer.
And, a group of friends and I got enough people for a team to register for a trail relay! Fingers crossed, we find out in a few days.

Slept thru the alarm like a champ #noworkoutforme
Breakfast: blueberry oatmeal muffins (2) + skinny cafe mocha -- totally spaced and forgot to order soy or almond milk so it wasn't vegan. Oops
Lunch: italian wonder pot leftovers - it didn't taste any better than the first time :(
Snack: blackberries + apple
Dinner: Create your own pasta bowl - Macaroni Grill + $3 Happy Hour with a pal. Nothing is better than catching up over wine at the restaurant we loved in undergrad #memories

Breakfast: Cinnamon Roll w/o icing
Lunch: Everest Cafe has a lunch buffet with vegetarian/vegan offerings. And it didn't disappoint. Legit. SO good, can't wait to go back. The curry, the warm naan, the sweet potato noodles, oh my.
Baked vegan thin mints + made M's vday gift before meeting friends for an early Valentine's Day feast at Aya Sofia. I've realized just how difficult it is to eat out as vegan, so in those instances I opt for vegetarian choices. #crisisaverted #kinda #firstworldproblems

(Friday 2/14)
Breakfast: Blueberry oatmeal muffin (2) + TAM protein powder mixed with water
Lunch: Black bean and corn salsa, spicy guacamole, tortilla chips - a big bunch of random basically
Dinner: Spicy fried rice with fried tofu from King and I (thai) + crab rangoon
Obviously the crab rangoon was not vegan, but it you smelled its siren song, you'd have dived face first into one/three too. Fact.

Day #7
(Saturday 2/15)
Slept in and headed straight for my long run (1/2) and proceeded to binge watch Problem Child 1 and 2.
Breakfast: Grapes + amino energy
After I cranked out 14.16 miles I was - famished. So I beelined home for lunch (photo above). Had my leftovers from Aya sofia (a delicious pasta/spinach/cheese dish) + "cheese" bread (ezekiel bread, earth balance butter, daiya shreds)
Dinner: King and I leftovers and Redbox - Carrie and Captain Phillips. I literally thought I'd have nightmares watching Carrie, but it wasn't bad. Captain Phillips was great, a bit unnerving (cuz I'm impatient), but a good movie.

Despite the struggle to wake up, I bundled up for the arctic and went to group run - which moved from Grants Trail to Forest Park because of all this icy madness. It was bitter. #understatementofthecentury. I'm so glad I went and go her done - six miles, complete.
Packed a gym bag for the first time, ever and showered afterwards. You're welcome Saint Louis. Saw About Last Night - hysterical.
Kick butt vegan spaghetti for dinner.
If my day off is anything like the weekend, its going to be splendid.
