Lucky gal that I am, my boss, middle sister, and Mark came to root me on. Afterwards Jennifer took us to Mokabees -- we'd never been and it's literally spitting distance from the house. Veggie Burgers are LEGIT. Get it with guac and jalapenos. Do it. 


The (dessert) devil made me do it. Or I volunteered happily. Whatever.


Baby sister graduated high school. With honors. 

Since all three girls were in one place, we held a "belated" Mother's Day, with this cake, replete with vanilla custard.

And yes, our high school (we all went there) was so small we have cake and punch afterwards in the Fellowship Hall for everyone. I loved my high school experience, did you?

Blessedly, my work gave me tickets to our box and VIP parking pass (holla!)-- minus my exhausted eyes (the game went into the 12th inning!), this was my excited I'm up far past my bedtime face

Running with these two -- running is my "me" time, but I'm trying to  compromise and take these dudes out for the first half, circle home and finish alone.  Everybody is happy. Besides, they know when we put on tennis shoes and I grab my Garmin its outside time and cry (cry!) until we leave.

Speaking of relaxing, I hosted a happy hour for some gal pals last week, made this cookie, and sat around gabbing for hours. 


Tip: toast 1/4 cup of nuts  on 350 for 5-8 minutes and toss them in prior to baking. Hot dog its mouthwatering.

There is something to be said gathering around a table with girl friends to check in, as we age and schedules get more hectic, I find the times when we get together as a group so special


All the arugula. Zucchini noodles are underneath. Any good tips on how to heat "zoodles"? I pan heat and they always come out a tad mushy. Gonna try roasting in the oven next time


Chocolate Peanut Butter "Ice Cream"
Serves one
adapted from here

1 Frozen Banana
1/2 cup Milk (I use Almond)
Pinch of Salt
1 tspVanilla Extract
1 tbsp Maple Syrup
1 tbsp of Chocolate PB2

Blend in Magic Bullet till smooth. Top with Cacao Nibs

Hit. The. (sweet) Spot.


Breakfast Scramble.  

Had to document it in all its glory and deliciousness.

2 Eggs
Trader Joes Hot Salsa
1 - Trader Joes Italian "Sausage"
Cheddar Cheese
1 - handful Arugula (as garnish)
2 - handfuls Spinach
Trader Joes Coconut Oil Spray

Cauliflower Crust Pizza -- recipe, here, topped with spaghetti sauce, sauteed onions, "beefless" meat, and mozzarella cheese

For Memorial we had Amie and her family over for a BBQ -- can I just say how over the moon I am they moved back to St. Louis? When she showed up with this I almost cried. It was fresh and delicious too boot. 

Baked hard boiled eggs -- silly easy. Ventured to test out these brownies. They turned out meh, but watching her little three year old crack eggs was the best part of my week.
